French Toast Muffins
I’m not a morning person, but I also can’t sleep in. That means I like a breakfast that can be quick and easy. Cereal is not something that works well for us, we are all hungrier an hour after we eat it than we were before. We like protein for breakfast to keep us full along with some carbs to fill us up. Eggs and bread work well for this but there are only so many ways to make them. I’ve tried Over Night French Toast, but this didn’t work for us, so I came up with the idea to make individual ones. These are made the night before and you just need to pop them in the oven in the morning. They are also a low mess grab and go breakfast.
Here is the recipe:
Makes 6
4 slices bread (preferably whole grain sourdough)
4 Eggs
1/4 Cup Milk, Cream or Half and Half
1/2 t. Cinnamon
1-2 T Sugar, Honey or Maple Syrup
1 t. Vanilla
Pinch of Salt
Directions:
1. Slice bread into chunks and put into the muffin tins.
2. Mix all the rest of the ingredient well. I do this in a measuring cup so that it is easy to pour into the tins.
3. Pour into muffin tins over bread. Don’t fill them all the way up the first time around to make sure you get the eggs evenly on the bread.
4. Push the bread down a little bit so that the eggs get all over the bread.
5. Cover and put in the fridge for the night.
6. The next morning pull them out of the fridge and heat the oven to 350 degrees.
7. When the oven is preheated put the muffins into the oven and bake for 25- 30 minutes. They are done when the eggs are cooked almost all the way through. If you wait until the eggs are dry they will be over done by the time you let them rest for a couple minutes so that they are cool enough to eat.
8. Pull them out of the tins and let cool slightly. Grab and go. If this is not a grab and go meal you can put syrup on them.
That’s all there is to it. It takes about 10 minutes the night before and only a couple of (working) minutes in the morning to get this on the table. Quick, easy and very filling. I can get by with just one of these with some fruit or 2 with no fruit and they keep me full until lunch time.
